Try adding this to the security key in security.yml

encoders:
        FOS\UserBundle\Model\UserInterface: sha512

so it's

security:
    encoders:
        FOS\UserBundle\Model\UserInterface: sha512

    providers:
        ...

    firewalls:
        ...
